A lyophilizer executes a water removal process typically used to preserve perishable materials, to extend shelf life or make the material more convenient for transport. This is accomplished by freezing the material, then reducing the pressure and adding heat to allow the frozen water in the material to sublimate. This three-stage process consists of a freezing phase, a primary drying phase (also known as sublimation), and a secondary drying phase (also known as adsorption). If performed correctly freeze-drying results in a high-quality preservation of product because of the low temperatures used in processing. Primary applications include biological preservation, biomedical preservation, and food processing.
The main components of any freeze dryer are a refrigeration system, a vacuum system, a control system, a product chamber or manifold, and a condenser. Control systems can vary widely in complexity. They typically include settings for temperature and vacuum pressure sensitivity, while advanced controllers allow for programming and monitoring of the process.
